I don't even know how to explain my love of this salad. I must admit it is not an original recipe. I "stole" it from a beautiful little restaurant called Ana Paula's. The thing is, I am to far away from this place now so I can't go there to buy one. ( If you ever decide to go there, please please get this salad) If not you can make it at home. It is so easy, so fast and something different to a normal greek salad.
What you will need.
1 X Pack fresh strawberries.
1 X Pack spinach leaves.
1 X Pack Almond cuts.
1 X Brie cheese ( you can use Camembert or Halloumi cheese)
6X Mint leaves.
1 X can of dessert strawberries in juice.
1 cup of sugar.
and a big pretty salad bowl.
Method.
1. Take the pack of fresh strawberries, put them in a lunch tin and cover with the cup of sugar. Store this in the fridge for at least an hour.
2. Get your salad bowl ready, add your spinach leaves and wash them off with water and a pinch of salt.
3. Cut up the previously sweetened strawberries and add to the salad.
4. Add the entire pack of almonds.
5. Cut up the cheese you are going to use into little cubes and add them to the salad.
6. Now add the mint leaves. ( they smell so yummy and fresh. Right?)
7. Last but not least add your can off dessert strawberries with the sauce. ( This is your salad dressing).
Tada!!! There you go! A delicious summer salad for your next lunch!
